Buckwheat Breakfast Bars with Turmeric Latte Mix

 

You guys, this was a totally random recipe using things I had in the house and I wasn’t even sure if it would work, but oh my goodness it totally did and I HAVE TO SHARE! ⠀


This was inspired by a recipe I call “Grandma’s Cookie Bars” that was inspired by my Slovak Grandma’s family famous recipe, but I made it gluten free and refined sugar free. The essence is a crumbly base with fresh jam on top. ⠀
Here are all of the ingredients: ⠀

For the chia seed jam:
•1/4 cup chia seeds, ⠀
•1 1/2 cups berries (blackberries), ⠀
•1 cup water, ⠀
•1-3 tbsp agave. ⠀

For the base:⠀
•1 1/2 cups buckwheat hot cereal or oats, ⠀
•1/2 ground flax seeds, ⠀
•1/2 cup plant based protein powder, ⠀
•1/4 cup nut butter (I used almond butter), ⠀
•1 1/2 tsp Turmeric Latte Mix,⠀
•1 cup alt milk (I used almond milk) ⠀
•1/2 cup apple sauce. ⠀

Topping:
@lovelilbucks original sprouted buckwheat cereal

What to do:
Preheat your oven to 375 degrees F. ⠀
We are going to make the chia jam first by adding all of the ingredients into a pot over a low flame and stirring until the berries have broken and the chia seeds are absorbing the water. ⠀
Set aside and let cool. ⠀
While the jam is cooling, mix together all remaining ingredients EXCEPT for @lovelilbucks . ⠀
Place the mixture into a 9 x 13 pan and spread evenly. ⠀
Pour the jam on top and spread evenly. ⠀
Bake for 15 minutes. ⠀
Remove from oven and sprinkle with @lovelilbucks . ⠀
Bake for 5 more minutes. ⠀
Remove and let cool completely before cutting or else the jam will be super runny. ⠀
You can even pop it in the fridge to cool faster. ⠀
I cut them into little squares and had them for breakfast with a scoop of yogurt or a drizzle of honey.

Probably would be DELISH with a scoop of vanilla ice cream as well! Hope you love them as much as I did!
