Hey there, curry lovers!
Today, we’re making a Golden Chickpea & Coconut Curry—a rich, creamy, and nourishing dish packed with warming spices and golden goodness. Perfect for a cozy meal any day of the week!
Ingredients:
- 840g cooked chickpeas
- 2 Cups water
- 120g spinach chopped
- 1 cup diced tinned tomato (pulp only)
- 1 red onion diced
- 2 tsp ginger grated
- 1 tsp celtic sea salt
- 4 Cloves garlic crushed
- 1 tsp Turmeric Latte Mix (options Original, chilli free or + lions mane)

In a pan, add water, onions, garlic, ginger, coriander powder, cumin powder, fenugreek powder, Turmeric Latte Mix, and salt. Stir and cook over medium heat until the onions are soft and fragrant.

Add the tomatoes, spinach, and chickpeas, stirring well. Cook for a couple of minutes until the spinach is wilted.

Pour in the coconut milk, stir thoroughly, and let it simmer on low heat for 5 minutes to allow the flavors to meld.
- Serving & Garnish Top with freshly chopped coriander for a burst of freshness.
